Simple Strawberry Cheesecake Yogurt Parfait Mini Pie Recipe

Until just about 10 or 12 years ago, I wasn’t really much of a breakfast person. My husband has always been the breakfast enforcer and also the one who best prepares many of the traditional breakfast staples like eggs, pancakes, etc. I, on the other hand, love to add a smooth, fresh touch to breakfast to both round out the meal and to fulfill everyone’s sweet tooth. Sort of like dessert for breakfast, if you will…

I came up with a recipe for a Yogurt Parfait Mini Pie that had everyone in my house really excited to try. It’s just the right mix of everything I love – a creamy yogurt parfait, crisp graham cracker crunch, fresh fruit, and of course, some delicious whipped cream!

Pie for Breakfast? Yes, please!

I know it sounds absurd to think of eating a pie for breakfast, but it’s actually the perfect addition for a nice brunch on the patio on a warm spring or summer day. Plus, it’s so ridiculously easy to make, even the kids get to help out! Anything left over from breakfast can also be eaten as a lighter, healthier dessert later in the day, so you can enjoy this delicious snack all over again.

Here’s a recipe for a Strawberry Cheesecake Yogurt Parfait Mini Pie that’s as easy as…well…pie!

Strawberry Cheesecake Yogurt Parfait Mini Pie Topped with Fresh Berries

Strawberry Cheesecake Yogurt Parfait Mini Pie

Ingredients
  • 2- 5.3 oz containers Dannon® Light & Fit® Strawberry Cheesecake Greek Yogurt
  • Keebler® Ready Crust® Mini Graham Cracker Pie Crust 6-count
  • 1 8 oz package of cream cheese
  • 3 tablespoons granulated sugar
  • Fresh strawberries or berries of your choice
  • Honey
  • Graham cracker crumbles
  • Reddi-wip® original whipped cream
Instructions
  1. Mix Dannon® Light & Fit® Strawberry Cheesecake Greek Yogurt, cream cheese, and sugar with an electric mixer until smooth.
  2. Transfer the filling onto Keebler® Ready Crust® Mini Graham Cracker Pie Crusts.
  3. Refrigerate pies for at least 2 hours until set.
  4. Before serving, drizzle with honey, graham cookie crumbles, and fresh cut strawberries.
  5. Top with a dollop of Reddi-wip® original whipped cream
  6. Serve and enjoy!

    Love cheesecake! This one is really easy to make and you can do this during parties or even when you’re hosting a dinner. There are so many variations too, thanks for the awesome idea!
